Domaine de Chevallier We produce mainly Chablis wine because the appellation is stretches itself out on almost 13 hectares. The appellations are delimited by the geological areas of the secondary Jurassic, a Kimmeridgian soil made of limestone and clay.
It is the best soil for the Chardonnay which is the only grape variety allowed to produce the Chablis wine. It gives finesse, fruitness and mineral flavours.
Our production is composed of 3 appellations:
- Petit Chablis: 1,5 hectares (3,7 acres)
- Chablis: 13 hectares (32 acres)
- Chablis 1er Cru.: 0,4 hectares (1 acre)

Domaine Fougeray de Beauclair The Burgundy area is located in the North-East of the Country. In spite of its tough winters and unsettled springs, its summers are quite similar to the Bordeaux ones. Summer and Autumnal luminosities play a very important role in the ripening.
20 hectares (50 acres) are cultivated in Burgundy, to produce 75% of red wine, 15% of rose and 20% of white wine. 15 hectares are also cultivated in Languedoc to produce 40% of red wine and 60% of white.
